Ingredients
For Corn
1 ear of corn per person, in the husk
Butter
Garlic
Red onion
Parsley
Chili Powder Mixture
(or substitute store bought Chili Powder or Cayenne Pepper)
Dried ancho and chipotle peppers, ground
Cumin
Smoked paprika
Salt
Mayonnaise
Crumbled Cotija Cheese (may substitute Parmesean or Feta)
Lime
Steps of Preparation
Combine room temperature butter with garlic, red onion, parsley and some of the chili powder mixture. Pull down corn husks and remove silk. Rub corn with seasoned butter and pull husk back up over the corn until your grill is ready.
At grilling time, remove corn husk and grill on medium to high flame until hot and slightly charred. Remove from grill before corn begins to shrivel. When corn is cool enough to handle, spread a thin layer of seasoned mayonaise on the ear of corn then sprinkle with cheese and Chili Powder mixture. Serve with wedge of lime.
